Walnut and Apple Cookie Cake Bites

This is part soft cookie, part cake - couldn't decide which side of the fence it fell so have called it a Cookie Cake!
They have a crunchy top reminiscent of a cookie when fresh from the oven but the inside is densely cake-like.
These can be baked directly on a baking sheet, moulded into round cookie disc shapes, or baked in mini silicone cake cases.

There is no added sweetener aside from the natural sweetness from the homemade applesauce but, as always, there is the option to add a little extra sweetness to personal taste.

They are perfect for on-the-go breakfasts and for a rushed grab-and-go by the kids on the way to school. They do contain flaxmeal which can be a source of gut irritant for some, though the ground meal version is certainly easier on digestion than the seeds. Technically flax is a seed and not a grain and in moderation I have found I tolerate it well.

Walnut and Apple Cookie Cake Bites

Grain-free, Gluten-free, Dairy-free, Refined Sugar-free
Makes 10
Ingredients:
1/3 cup coconut flour
1/3 cup flax meal
1/2 tsp baking powder
1 tsp cinnamon
pinch of salt
2 tbsp coconut oil, melted
1/3 cup homemade applesauce
1 egg
1/3 cup coconut milk
1 tsp vanilla extract
1/3 cup chopped walnuts (omit to make recipe Nut-free)
Optional: 2-3 tbsp maple syrup

Instructions:
1. Preheat oven to 175 degrees celsius, 35 degrees farenheit.
2. Combine all dry ingredients in a large mixing bowl, except for the walnuts.
3. Combine all wet ingredients in a separate bowl and mix well.
4. Add wet ingredients to dry and combine thoroughly.
5. Add the walnuts and stir through.
6. Divide mixture between 10 silicone cake moulds or a greased muffin tray.
7. Bake in preheated oven for 20 minutes or until top starts to brown and skewer inserted comes out clean.
8. Remove from cases and cool completely on a cooling rack.

*Options: Add choc chips, any other chopped nut, raisins or shredded coconut instead of walnuts.
