Fennel Peach and Cucumber Simple Summer Salad

I make so many variations of this salad in the summer. It is super quick to make, satisfyingly crunchy and fresh. Add or omit whatever salad bits you might have lurking in the fridge; as long as there is a juicy piece of seasonal stone fruit, the aromatic crisp crunch equivalent to fennel and the hydrating freshness of cucumber and mint!
