Mint Choc Chip Green Smoothie

This week I noticed that my mint plant is fully sprouting an abundance of green leaves again, having gone dormant for the duration of winter. Oh, to be a mint plant!

I'd gone to sleep last night dreaming of how to incorporate some of that fresh mintiness into my day and had woken up with my heart set on my favourite icecream flavour, the classic Mint Choc Chip! Stubbornly refusing to let the April showers put a dampener on things here it is.

Unlike the artifically enhanced green colour of many commercial mint flavoured icecreams, the green in this smoothie is all from the chlorophyll in the mint and spinach leaves. Chlorophyll is helpful for detoxification, encourages wound healing and is a super potent antioxidant.

The sweetness is all from the banana, which also gives it a creaminess, reminiscent of ice cream. Freezing the banana beforehand gives the smoothie an even thicker lusciousness.

The collagen hydrolysate is entirely optional - it is basically a gelatin that doesn't 'gel' and I like to include it for its anti-inflammatory and anti-aging properties.

Another option is to include actual 'Choc Chips' in the form of a sprinkle of raw cacao nibs on the top. Bear in mind they may cause a blockage in your straw and will require a spoon to eat!

Grain-free, Gluten-free, Refined Sugar-free
Better than Beer: Mint Choc Chip Green Smoothie

Serves 1

Ingredients:
Handful of baby spinach, washed and dried
13-16 mint leaves, depending on size, washed and dried
1 banana, frozen in discs
1 cup almond milk (or use coconut milk if nut intolerant)
1 tsp vanilla extract
2 tbsp collagen hydrolysate (optional)
1/2 - 1 square 90% cocoa chocolate, grated
Optional: cacao nibs for garnish

Instructions:
1. In a Nutribullet or blender add spinach, banana discs, mint leaves, collagen (if using), vanilla and almond milk.

2. Blend until smooth.
3. Stir through the grated chocolate.
4. Pour into a glass and garnish with extra grated chocolate or cacao nibs if using.

5. Enjoy immediately.
