This is so simple it could be made every day - if you were that way inclined!
I have made this for two consecutive Valentine's Day desserts and the children love that I make them a mini portion each too.
Super Simple Dairy Free Chocolate Mousse
Dairy-free, Gluten-free, Grain-free, Nut-free
Serves 2
Ingredients:
1 can coconut milk
2 tbsp honey
3 tbsp unsweetened cocoa powder or cacao powder
Instructions:
1. Refrigerate can of coconut milk for a few hours or overnight. You may wish to refrigerate 2 in case one doesn't yield enough coconut cream.
2. Open can and spoon out only the solid coconut cream. Depending on the brand, this generally yields around 1 cup. If insufficient, use the second can. The liquid portion can be transferred to a fridge-safe container and saved for another use.
3. Place the solid coconut cream into a freestanding mixer and slowly whisk until it develops a mousse-like texture. gradually increasing the speed.
4. Add the cocoa powder and honey and continue to mix until well incorporated.
5. Transfer to individual ramekins, or pipe for a prettier effect (I don't have a piping bag so put it all in a polythene food bag and snipped off the corner for a makeshift piping bag).
6. Refrigerate to set firmer or eat soft, topped with a few blueberries, chopped nuts, shaved chocolate or shredded coconut.
