I LOVE coconut - which is more than fortunate given its popularity in the paleosphere; for eating, slathering on skin, oil pulling (how does anyone have time to do this daily for 20mins every morning before breakfast?) etc etc.

I also LOVE LOVE LOVE chocolate (albeit only 90% cocoa, or 85% at a push - when the sugar portion creeps any higher my digestive system protests very vociferously).

So here is my guilty secret - shhh!

Cocoa Coconut Macaroons My Way

Grain-free, Gluten-free, Dairy-free, Refined Sugar-free, Nut-free

Ingredients:
1 3/4 cup unsweetened dessicated coconut
1/4 cup cocoa powder (I use Green and Blacks or raw cacao powder)
pinch of salt
pinch of chilli powder
1 tbsp cinnamon
1/3 cup coconut oil (melted)
1 egg
1 tbsp vanilla extract
1 tbsp coconut milk (add another tbsp if mix seems too dry)

Instructions:
1. Preheat oven to 175 deg celsius (350 farenheit)
2. Mix together all dry ingredients (first 5 items) in a bowl.
3. Mix together all wet ingredients (last 4 items) in a separate bowl.
4. Add wet mix to dry mix and combine thoroughly.
5. Use a tablespoon to measure out portions. Place evenly on baking paper lined baking tray. Try to make sure each one is quite compressed otherwise they tend to crumble apart when baked. As you can see mine got progressively messier as the mix increasingly stuck to the spoon! If uniformity is important to you then put the spoon in a cup of water between scoops or grease the spoon.
6 Pop in preheated oven for 10 minutes - but keep a close eye on them as, depending on size, they may not need the full 10mins.
7. Cool completely before removing from tray as they firm up once cool.
8. Store in airtight container (or eat immediately).

Mine ended a bit crumbly and would work well crumbled over coconut yogurt as a granola type treat!


* Optional: For those just starting to transition to no/lower sugar intake try adding 1/4 to 1/2 cup honey for more sweetness. Since completing the 21 DSD (21 day sugar detox) I find even a little sweetness sufficient. Plus excessive sugar causes immense discomfort of bloating and stomach cramps for me so I mostly try to steer clear.
