Blissful in that they taste divinely creamy, sweet and deliciously treatlike. Also in that any child (or fussy grown up) will be blissfully ignorant that they are inadvertently consuming hidden carrots and antioxidant rich turmeric!
Mango Coconut and Carrot Bliss Balls
Grain-free, Gluten-free, Dairy-free, Refined Sugar-free, Nut-free
Makes 15 bliss balls
Ingredients:
100g (approx 1 cup) dried unsweetened mango
125g (1 1/2 cup) unsweetened dessicated coconut
1 small carrot (65g)
1 inch piece lemongrass, woody layer removed
zest of a lime
1/4 tsp turmeric
pinch pink salt (I use this Himalayan pink salt - use code IMPAL10 for 10% discount)
optional: extra coconut for rolling
Instructions:
1. Soak mango in filtered water for 10-15 minutes, until soft but not soggy and disintegrating. Drain well and pat dry on kitchen paper.
2. Add all ingredients (except the extra coconut) to a food processor and process until a sticky dough is formed.
3. Roll into balls of desired size (mine are approx tbsp size).
4. Roll each ball in the extra coconut if coating. I mixed some coconut with matcha powder to get a green coloured coating :)
5. Pop in freezer on a tray for 30mins to firm up then transfer to sealed container and store in refrigerator (or freeze and defrost individually).
