Raw Cacao 'Chunky Monkey' Chia Pudding

How could I not include a chocolate flavour in my Chia Breakfast Pudding series? The original B&J's Chunky Monkey doesn't stand a chance with this healthful, moo-less, sugar-free contender in the opposite corner - TKO!

Hazelnut milk pairs particularly well with the cacao (think ferrero rocher minus all the bad bits) but almond milk also works well. Likewise, raw cacao can happily be substituted for unsweetened cocoa powder, though there will be a slight compromise in antioxidant levels and richness of flavour.

Banana adds a creaminess and natural sweetness to the chocolate without the need for extra sweetener though there is always the option to add honey to taste. Bananas are naturally high in tryptophan, which converts into serotonin (a mood booster) as well as being high in vitamin B-6, iron and potassium (a proponent in lowering blood pressure).

My perfect topping is walnuts (which are high in good fats, antioxidants and amino acids), banana discs, cacao nibs for chocolatey crunch and extra coconut flakes for a bit more bite.

Give me a bowl of this any day over B&J's best!

Raw Cacao 'Chunky Monkey' Chia Pudding

Makes 1 large bowl (or 2 smaller dessert bowls)

Grain-free, Gluten-free, Dairy-free, Refined Sugar-free
Raw Cacao 'Chunky Monkey' Chia Pudding

Ingredients:
4tbsp chia seeds
1tbsp unsweetened dessicated coconut
1/2 ripe banana
1 cup (250ml) unsweetened hazelnut milk (or almond milk)
1tsp vanilla extract
2tbsp raw cacao powder (or unsweetened cocoa powder)
Optional: 1-2tbsp honey to taste

Toppings:
1/2 banana, sliced into discs
Unsweetened dessicated/ flaked coconut
Walnuts
Cacao nibs

Instructions:
1. Blend the banana, tbsp of dessicated coconut, nut milk, vanilla and cacao powder (and honey if using) until smooth. I use my Nutribullet but any blender or processor will work.
2. Stir the blended mix with the chia seeds in a bowl.
3. Cover and place bowl in the fridge for minimum 6 hours, preferably overnight, for the chia seeds to absorb the liquid and expand. If possible, give the mix another stir after 15-30minutes to ensure chia seeds don't sink to the bottom before full expansion.
4. When ready to eat, add toppings and dig in.
