Raw Nut-Free Naked Brownie Bars

These are just simple snack bars that everyone in the family can grab and take to work/ play/ school. They take a few minutes to whizz up in the food processor and contain a LOT less sugar (unrefined of course) than the store-bought equivalent and also work out a lot cheaper. I wrap them individually and store in a sealed container in the fridge

Raw Nut-Free Naked Brownie Bars


Raw Nut-Free Naked Brownie Bars 
Grain-free, Gluten-free, Dairy-free, Refined Sugar-free, Nut-free

Makes 9

Ingredients:
1 cup (150g) raw unsalted sunflower seeds
1 cup (100g) milled flax/chia seed blend
1 cup (150g) soft,unsweetened pitted dates (pre-soak briefly if hard and drain)
1/4 cup (50g) unsweetened raisins (soaked briefly and drained)
3 tbsp unsweetened cocoa powder
big pinch sea salt
1 tbsp cinnamon powder
1 tbsp vanilla extract
1 tbsp coconut oil
a few tbsp hot water as needed
optional stir-through add-ins: if not nut-intolerant 1/4 cup roughly chopped almonds; cacao nibs; goji berries, chocolate chips

* Alternatives:
- add 1 tsp mint extract instead of vanilla and cinnamon for mint choc flavour;
- add 1 tsp orange extract instead of vanilla for choc orange flvour;
- use dried cherries or cranberries instead of raisins for a berry flavour;
- add a tsp ginger powder for extra zing;
- melt a bar of good quality chocolate and drizzle over the top

Instructions:
1. Add all ingredients except hot water and optional add-ins to food processor and process until mixture clumps together to form a sticky dough. Processing for a little longer will make a smoother textured stickier brownie.
2. Add hot water if needed if mixture too dry.
3. Stir through any optional add-ins if using, by hand.
4. Transfer mixture to a parchment-lined baking tin or tupper ware. Press mixture down firmly and evenly.
5. Freeze for approx an hour until set then remove from tin and slice into portions using a sharp knife.
6. Individually wrap each bar or store direct in sealed container in fridge. Alternatively freeze and defrost briefly prior to eating.
