I make so many variations of this salad in the summer. It is super quick to make, satisfyingly crunchy and fresh. Add or omit whatever salad bits you might have lurking in the fridge; as long as there is a juicy piece of seasonal stone fruit, the aromatic crisp crunch equivalent to fennel and the hydrating freshness of cucumber and mint! An effective #happinesshack is a big bowl of this salad in the warm sunshine; my little robin friend flitting by the cherry tree in the garden.... Summer days...
Fennel Peach and Cucumber Simple Summer Salad
Grain-free, Gluten-free, Dairy-free, Refined Sugar-free
Serves 1-2
Ingredients:
1 fennel bulb, finely shaved or use a mandolin (reserve fennel fronds for garnish)
2-3" piece cucumber, finely sliced into half moon discs
1 ripe peach, sliced
handful raw unsalted pistachio nuts
small bunch fresh mint leaves
juice of 1/2 lemon
1 tbsp EVOO
sea salt to taste
Instructions:
1. Toss fennel, cucumber, peach and mint together in a large bowl.
2. Drizzle over EVOO (more if preferred) and squeeze over the lemon then season with a pinch of sea salt.
3. Toss to combine before tasting and adjusting seasoning if required.
4. Add pistachios just before serving and garnish with fennel fronds and optional edible flowers.
