This is a great way to start the day as the
matcha provides a lovely morning boost, with some caffeine and, more
importantly, plenty L-theanine (an amino acid reported to boost concentration).
The anti-ageing, antioxidant and detoxifying benefits are just extras thrown in
for good measure.
Courgette (zucchini), cucumber and sweet peach rehydrate the body after a night's sleep while coriander is anti-inflammatory and fennel is both cleansing and high in potassium, helpful in controlling blood pressure.

Ingredients:
1 large handful of fresh coriander
1/2 medium courgette (zucchini), approx 90g, roughly chopped
2 inch piece cucumber
1/4 fennel bulb (40g), roughly chopped
1/2 medium peach
1/4 medium ripe avocado
2 tbsp unsweetened dessicated coconut
1 tbsp ground chia seed
1 tsp matcha powder
1 tbsp lucuma powder
1 tsp manuka honey (add extra to taste if needed), or maple syrup if vegan
optional 1/2 tsp rose water
3/4 - 1 cup coconut milk or coconut water
Toppings: 1/2 peach, pistachios, and any other nuts, seeds, fruits of choice eg rose petals, dried mulberries, bee pollen, black sesame, pecans, goji berries
Instructions:
1. Add all ingredients (excluding topping ingredients) to a high powered blender, starting with 3/4 cup coconut milk, and blend until smooth.
2. Add extra honey if needed and extra coconut milk if too thick. Note that the mixture will thicken as the chia seeds absorb more liquid.
3. Transfer to bowl and top with sliced peach and toppings of choice. Eat immediately.
