Apricot and Brazil Nut Cardamom Bliss Balls

The calming effect of rolling up a batch of bliss balls. These combine the tangy taste of unsweetened apricots (try to use unsulphured if possible even though the colour looks less pretty!) with the warmth of vanilla and cinnamon and an extra kick of aromatic spice from the complex flavour of cardamom.

Brazil nuts provide a hefty dose of selenium, essential to immune and thyroid function, as well as magnesium, which aids with the functioning of muscles and absorption of energy from food. They are also a good source of copper, which is used for building strong tissue and producing energy in the body's cells, and phosphorous, to support teeth and bone health.

If making these for little ones with fussier taste buds unaccustomed to the heady scent of cardamom, halve the amount used or omit altogether and add a little extra cinnamon. Enjoy x

**Side note: these are very sweet compared with most of my recipes so anyone with a sensitivity to excess sugar (albeit natural) be aware - you might wish to sub 1/4 cup of the dried fruit for a couple tbsp of coconut oil instead.


Apricot and Brazil Nut Cardamom Bliss Balls
Grain-free, Gluten-free, Dairy-free, Refined Sugar-free

Makes 15 balls


Ingredients:
1 cup (150g) dried, unsweetened, unsulphured, pitted apricots (I used 15)
1/4 cup (40g) dried unsweetened, soft pitted dates (I used 3)
1 cup (150g) raw unsalted brazil nuts
generous pinch of Creative Nature Superfoods Himalayan Pink Salt
1/2 - 3/4 tsp ground cardamom (depending on preference)
1 tsp ground cinnamon
1/2 tsp vanilla extract
Optional: splash of warm water

Instructions:
1. If using harder apricots or dates, pre-soak these in a little warm water for 5-10 minutes and drain before using.
2. Add apricots to food processor and pulse until a rough sticky dough starts to form.
3. Add dates, salt, cardamom, cinnamon, vanilla and continue to process until it comes together to form a stickier mass. This doesn't take long.
4. Add nuts and process until nuts are well chopped and incorporated into the mix and the dough clumps together when pressed. Do not overprocess so as to retain some texture. Add a tsp of warm water at a time if needed.
5. Roll into equal sized balls. Store in fridge or freezer in sealed container.
