Make these big or small - wrapped in lettuce wraps or alongside a colourful salad or pile of roasted veg. The kiddies usually prefer them miniature-sized next to a big creamy blob of mashed sweet potato.
Mini Turkey Burgers
Grain-free, Gluten-free, Dairy-free, Nut-free, Refined Sugar-free
Makes 15 small patties
Ingredients:
500g turkey mince (I used turkey breast mince but would work well with leg meat minced or chicken mince)
1/4 cup (4 tbsp) tahini
bunch of coriander (approx 20g), finely chopped
(optional) 2 spring onions, chopped
2 tbsp coconut aminos (or tamari if tolerated)
2 tbsp sesame oil
1 tbsp rice wine vinegar (no added sweetener)
1 tbsp fish sauce
(optional) 1 tbsp raw honey
(optional) 2 spring onions, chopped
(optional) sesame seeds for sprinkling on top
Instructions:
1. Preheat oven to 175 degrees celsius, 350 degrees farenheit and line a baking sheet with parchment paper or lightly grease with coconut oil.
2. In a large mixing bowl combine all ingredients except the spring onions and sesame seeds. Ensure well combined.
3. Place heaped tablespoons onto prepared baking sheet and gently shape into rounds, slightly flattening them to achieve a burger shape. Alternatively divide mixture into larger portions and shape into more generous burgers.
4. Sprinkle the surface of each burger with spring onions and sesame seeds if using. Gently press into the burger surface to ensure they adhere.
5. Bake in preheated oven for approx 25 minutes or until golden on the edges and cooked through. Larger burgers will require a longer cooking time.
