A hugely versatile side dish that can be bulked up with protein and some extra fat from avocado or a handful of nuts, to make a simple and satisfying meal. I like to make a big bowl leaving plenty of extras in the fridge for lunch the next day.
There is an option to add a tsp of honey to sweeten the dressing but I actually prefer it without.
Asian Courgette Noodle Salad
Grain-free, Gluten-free, Dairy-free, Refined Sugar-free, Nut-free, Vegan, Raw
Serves 2
Ingredients:
1 medium courgette, washed, dried and 'noodled' using a julienne peeler, spiraliser or food processor
3 tbsp dried wakame seaweed, soaked, rehydrated and drained
1 bunch coriander, roughly chopped
1 small carrot, peeled and julienned/ spiralised
3 tbsp tahini
1 tbsp sesame oil
1 tbsp apple cider vinegar
1 tbsp fresh lime juice
1 tbsp coconut aminos or tamari if tolerated
sesame seeds
optional: 1 tsp honey
Instructions:
1. In a large bowl, toss together courgette, wakame, carrot and coriander.
2. In a small bowl or cup whisk together the tahini, sesame oil, ACV, coconut aminos/tamari (and honey if using).
3. Add enough dressing to the salad to ensure even coating of all salad in the creamy dressing. Any extra dressing can be stored in the fridge in a sealed container and used to dress plain salad leaves.
4. Scatter over with sesame seeds.
5. Enjoy alongside my Dim Sum Inspired Meatballs or just a few chunks of avocado and a tin of smoked oysters for a simple lunch.
