In the 'old days' my husband and I could easily demolish a family-sized bag of Doritos or pretzels between the two of us in front of a movie.
Despite the certainty of subsequent inevitable bloating, cramps and constipation (how romantic), the lure of MSG, salt, fat and the satisying crunch was a taste temptation too powerful to resist.

It's been so long since my last close encounter with a Dorito type snack I think I may have finally developed immunity to its attraction.

That's not to say I don't still enjoy the taste and texture sensation of an equivalent healthy incarnation.

Enter the No Cheese 'Cheesy' Kale Chips - even the 4 year old happily eats them. Extra portion of veg in his diet at snacktime is a veritable victory of my day.

No Cheese 'Cheesy' Kale Chips

Grain-free, Gluten-free, Dairy-free, Refined Sugar-free, Nut-free

Makes a big serving for one serious kale chip lover!

Ingredients:
2 big handfuls of kale, washed, dried, trimmed of tough stem and torn into similar size pieces
2 tbsp olive oil, or melted coconut oil
1 tbsp apple cider vinegar
1/2 cup nutritional yeast (this gives the cheesy taste and is high in a long list of vits and minerals)
1 tsp thyme leaves (I have a thyme plant in my garden so use this frequently)
1/4 tsp smoked paprika

Instructions:
1. Preheat oven to 175 degrees celsius, 350 degrees farenheit.
2. Whisk all ingredients except the kale in a big bowl.
3. Add the kale and using hands, ensure all leaves are well coated and mix is evenly distributed.
4. Line a baking sheet with parchment.
5. Scatter the kale evenly across the baking sheet, making sure it is not overcrowded. Use another baking sheet if needed.
6. Bake for about 10minutes, turning once halfway, until edges are crispy but not burnt.
7. Keep a close eye as time may vary depending on the oven.



Options:
- Add an extra tbsp of apple cider vinegar to give a 'salt n vinegar' flavour (try using less oil as it may end up too wet to give a crisp finish)
- Add a tbsp of onion or garlic powder for a 'cheese n onion' flavour
